Never if it can at all be avoided! I remember on my trip maybe three times in 9,000 miles that I had to resort to the freeway (by which I mean, Interstate). Once was about a 70 mile shot between Butte and Missoula, MT because I tried and couldn't find any other way. Once was crossing the Columbia River between Washington and Oregon. Once was crossing the Golden Gate into San Francisco. And I'm sure there was another one or two in there somewhere.

No, for long journeys, state highways and smaller roads are the way to go! Preferably roads that are 55mph and under, though this is not always possible. Sometimes you have to resort to 65mph roads. On my trip I did a lot of riding on the shoulder, especially in the beginning. Not sure that I'd recommend that because it can certainly be dangerous, but that's what I did.

When planning your route especially keep an eye out for those little green dotted roads on your atlas than represent scenic drives. Also, leave yourself some leeway to make up the route as you go, if time will allow. You never know what tip you might receive along the way or what lovely path might catch your eye that you didn't expect when you were just looking at a map.

Good luck!

Yes, as a private pilot, I should know. It is a VOR, short for VHF omnidirectional radio range, is a type of radio navigation system for aircraft. A VOR ground station broadcasts a VHF radio composite signal including the station's identifier, voice (if equipped), and navigation signal. In other words, when flying, you can identify the location of the ground VOR and use it to identify your position. Most are owned and operated by the FAA but some are military.

If you want to know more, here is the Wikipedia page:
